Black Bottom Pie

Cheryl and I baked a black bottom pie this weekend and are on the third day of enjoying it. We haven't made this in a really long time because it's so much work but it sure seems well worth it when we're eating it! See the Comments section for the recipe....

Cheryl is so damn aggravating -- she has LOST the picture of the Black Bottom Pie so now I can't post it with the recipe....... argh!!!

BLACK BOTTOM PIE
1T gelatin
1/4c water
2c rich milk (substitute 1-1/4c whole milk plus 3/4c half-and-half)
1/2c granulated white sugar
4t cornstarch
4 egg yolks
1-1/2oz melted unsweetened chocolate
1t vanilla
3 egg whites
1/4t cream of tartar
1c whipping cream
2T powdered sugar
1/2oz shaved semisweet chocolate
Prepare and bake a single crust from any basic pie dough recipe. Soak gelatin in 1/4c cold water. Scald milk. Combine 1/2c sugar and cornstarch. Beat egg yolks until light.
Slowly stir the milk into the egg yolks. Stir in the sugar mixture. Cook these ingredients over boiling water (in a double boiler), stirring constantly until the custard coats a wooden spoon heavily. Take out 1c of the custard. Add melted unsweetened chocolate to it and beat it until blended and cool; then add 1/2t vanilla.
Beat until well blended the egg whites and cream of tartar. Beat until stiff but not dry. As you are beating, gradually add 1/4c sugar a teaspoon at a time.
Fold the egg whites into the custard. Cover the chocolate custard with the vanilla custard. Chill to set.
Whip up the whipping cream and gradually add the powdered sugar. Cover the custard with the whipping cream. Top the cream with 1/2oz shaved semisweet chocolate.
